[Of obscure origin; perh. f. rash v.2 1, but Minsheu (1627) explains it as a piece ‘rashly or hastily roasted’. Cf. ‘Rashed, burnt in cooking, by being too hastily dressed’ (Halliwell).]
A thin slice of bacon or ham, cooked (or intended to be cooked) by broiling or frying.
