rabbit's ear Also rabbit ear. [f. rabbit n.1 + ear n.1] 1. A perennial herb, Stachys olympica (formerly S. lanata), belonging to the family Labiatæ, distinguished by greyish foliage and dense white tomentum covering the whole plant; usually called lamb's ears.
