Apparently first used in 1973 by Dr Robert M. Metcalfe, researcher at Xerox PARC (Palo Alto Research Center) in California:

He chose to base the name on the word ‘ether’ as a way of describing an essential feature of the system: the physical medium, (i.e., a cable) carries bits to all stations, much the same way that the old ‘luminiferous ether’ was once thought to propagate electromagnetic waves through space. ]
Any of several types of local area network in which collision detection is the means of dealing with an attempt by two or more systems to transmit at the same time; the protocol on which such networks are based. Freq. attrib.
Ethernet networks use baseband signalling and have either a linear bus or a star-shaped topology. Originally, Ethernet used coaxial cable and supported data transfer rates of 10 megabits per second; newer versions (e.g. Fast Ethernet and Gigabit Ethernet) support data transter rates of 100 and 1,000 megabits per second, respectively.
